In February 2023, Thierry Marx opened a restaurant that is committed to the training of young people in particular. In a décor inspired by the marine world, in place of what was once La Marée, the Michelin-starred chef offers an innovative menu, developed in collaboration with physico-chemist Raphaël Haumont. The menu features a number of Marxian signature dishes: trompe-l'œil onion soup, soy risotto, cross-arm ravioli (revisited)... Each new dish is a surprise. An astonishing taste and sensory experience!

Une très belle expérience en gardant un œil sur la cuisine où l’on voyait le chef piloter son équipe.
Du début à la fin, c'était que du bonheur.
Merci de m'avoir offert le plat de lieu jaune en plus du bœuf que j'avais commandé. Cette attention m'a particulièrement touchée.
Bravo pour le pré dessert, les aubergines fumées c'était risqué, mais ça a fait mouche.
