Olive de Mer (n.f.): scientific name "donax"; small shell of the donacidae family with an elongated shell, pastel colour, which lives in the sand at the water's edge.... And yet we are not by the sea, but in Mérignac very close to the airport. As a call to travel, the brasserie of the Hotel Quality Suites Bordeaux Airport & Spa is open to everyone, lunch on weekdays and every evening. Forget your assumptions about hotel restaurants, and go for it! The cuisine is delicious and creative. Although the suggestions on the lunch menu are renewed every week, the classics are rarely displayed. Look at this. Look at this: mushroom cream, large bacon of pork breast confit with spices or large cracked cabbage stuffed with ricotta cheese and herbs as a starter, roasted guinea fowl supreme, cooked gnocchi with spinach and artichokes, meat juice, braised beef chuck in red wine, muslin of parsnips and candied white carrots, or soft cod back, basil broth potatoes and aromatic sauce for the dishes. The same goes for desserts: jar of vanilla cream, chocolate tube, topped with ivory beer cream or citrus ginger soup, grapefruit sorbet ball. Let us reassure you, the essentials are à la carte. An ideal address for everyone!
