LA FERME AUX ESCARGOTS
Altivia Escargots and SO Escargots, two snail farms in Gironde, have joined forces to create La Ferme aux escargots, located on 3 hectares in the Beutre district of Mérignac. At its head: Christophe, a former cook, and Khalid, who already has a heliciculture operation spread over two sites (in Gironde at Mongauzy, between La Réole and Marmande, and in Lot-et-Garonne at Grezet Cavagnan). Their goal: to bring back the taste of the day to the little grey in the Bordeaux sauce. They sell raw, cooked and cooked snails on Saturday mornings at the market in Mérignac.
