Departing from Pauillac, we board ILOUT for a 15-minute trip to the island of Patiras. The lighthouse keeper welcomes us on the pontoon for an unusual lunch-tasting in the middle of the estuary. Very attached to this exceptional environment, chef Violette Sart and her brigade cook dishes that couldn't be fresher and more local: fruit trees harvested around the lighthouse, producers from the Médoc and Blayais regions. 100% of the refuge's waste is sorted. Then it's time for a guided tour of the site with François and his contagious passion.
