AU CŒUR DE LA FORÊT
Guest house in the woods concocting seasonal dishes.
As his name indicates, you have to dig into the woods to find the house of André and Françoise Touati. And when you say their house, that's in the truest sense of the word, because they live there. After having parked the car between two almost-aged trees, it is in their dining room that we take place. Françoise boasts his husband's cuisine, talks about the wine list, ensures everyone's well-being, and not forget to hand over a log in the chimney from time to time. Behind his furnaces, André has seasonal dishes. We keep a memory moved from an omelet to Chanterelles chanterelles, sherry vinegar and sabayon veined to pink garlic, followed by a peasant pig from the Conflict Cantal, trompettes-mort and chestnuts and a brioche pie to caramelized pears.
If the leaves get to the excavator, compliments for André and Françoise also.
