L'Instant V as in Vermeilh, the family name of Salwa and Benoît, the proud owners of this establishment opened at the end of January 2019. The furniture barely installed, new colours on the walls, good humour on the shoulder, the couple is busy serving customers. This spacious brewery has a large terrace in the central square, part of which is sheltered from the elements under the arcades. The welcome is warm, the cuisine simple and generous, just like the whole team. You can enjoy the Limoux speciality le Fréginat, a fricassee made from pork chunks in sauce, served with white beans cooked in duck fat, but the special mention goes to the back of cod in coconut crust and its risotto. You can enjoy various salads, the traditional cassoulet with its candied duck leg, grilled meats without forgetting the possibility of eating vegetarian or gluten-free on request. The menu evolves with the rhythm of seasonal products and will give more and more importance to fish. Theme evenings will see the light of day, ideas are not lacking for our greatest pleasure.

Always welcoming with the lady who runs it formerly making the Grande Café work well (before the current owners). The food is always cooked very well, and the weekly “menu de jour” is excellent value. The a la carte is limited but does the local dishes well, and their salads are always worth a look on warmer days.
