The town of Limoux is famous for its blanquette, but also for its carnival, the longest in the world. It begins in January and ends over ten weeks later, culminating in the blanquette night. Attested as far back as the 17th century, its origins date back to the 14th century, when millers celebrated the payment of their royalties to the Prouilhe monastery on Mardi Gras day, crossing the town throwing flour in the faces of passers-by. Since then, it has evolved and remains highly codified.
