On the banks of the Canal du Midi, Bruno Plana and Laurent Hund's gastronomic inn enjoys a beautiful bucolic setting. These chefs, who trained in some of the world's top restaurants, offer a new take on Mediterranean cuisine. We tried the Lou Del Mitan menu, and it was an explosion of flavours: fried shellfish ravioli, on creamy sweet potato with coconut milk, lime zest and roulade of lamb breast confit in its own juices, stuffed with Lucques olive tapenade, braising jus with preserved lemon. The plates are beautiful, the cooking and juices perfectly executed.
