Since Rodolphe Junis, restaurateur and Denis Testa, wine merchant that is well-known in Carcassonne took back the reins of Table des Vignerons, the place has become the unmissable addres of Minervois. Much more than a restaurant, with its concept close to the lovacore movement, this place which is housed in the former wine cooperative of Trausse, offers a cuisine made from local products. From the garden to the table, there is only one step: here, the vegetables are grown behind the building, the poultry and the eggs are from the hen house and the organic wines made by Jean-Luc Fabrié, winemaker. Besides, it is from Jean-Luc that the idea of the concept came: stop cheating with products, working with proximity sources and maintain honest prices. Successful bet. The menu is attractive and brillantly blends fish, meat and a range of organic wines of cellar price. On the menu, specialties of the region like the cargolade and its aïoli, the mushroom omelette, the meats grilled over a wood fire, and the seasonal dishes that sweetly smell the terroir of here. On fine days, you will enjoy taking your meal on terrace or under the pergola. The concert evenings in summer, the atmosphere is often very hot!
