Over the last few years, Pascal and Sophie have given a new lease of life to the Moulin de Trèbes. The place is magnificent, with its shady terrace on the banks of the Canal du Midi, and a dining room that combines the cosy charm of an old mill with modern comforts. Here, high standards are set for both the dishes and the quality of service. The chef favours short circuits, small producers and only seasonal produce, and his cuisine is imaginative, tasty and modern. One of the best local restaurants to visit all year round!

Travelling from Australia, sometimes finding the right restaurant can be difficult. Our host at La Maison de Trapel (a great b&b) recommended Le Moulin de Trèbes and noted, rightly, that a reservation would be needed.
Service was excellent, from initial booking with my terrible French through to welcoming and looking after us. Just the right level of attentiveness and letting you be.
Food was outstanding. Three of us dined.
Entrées: salmon gravalax x2 + foie gras
Plats: bœuf + canard + poussion du jour (sea bass)
All dishes were great. Gravalax great - beetroot with it a highlight. The boeuf was slight smoked which was delightful (potatoes with the Beef were probably the only thing that could have been better). My sea bass was outstanding- the lobster bisque with it set I’d off beautifully.
Started off with a lovely local crémant and then a local Shiraz-like varietal I hadn’t had before - unless you a super wine person trust the owner, she knows the local wines and has a list of about 50 (and don’t forget you can cork and take it with you if you don’t finish it so please do dive into a local bottle!)
Dessert was the spéculos millefeuille and chocolat fondant. Both were lovely. The mains certainly stood out.
This is a great restaurant and I would definitely dine here again.
Nous Avons fait le trajet en bateaux jusqu’ici pour nous faire refuser l’entrée …très décevant …vous devriez mettre cette information sur votre site internet et fiche Google pur éviter d’autres touristes de se faire prendre
