In 1991, Marc Cabaret was 45 years old when he made a professional shift at 180 °. This former supermarket owner, passionate about wine, buys two vineyards to create the Domaine du Sacré-Coeur, 35 ha divided between Assignan, Villespassan and Saint-Jean-de-Minervois. The clay-clay soil between 270 and 350 m above sea level provides the wines with natural acidity favourable to the rearing of wines. In 1995, his son Luc entered the field after studying wine and wine studies. Besides Syrah, Grenache, mourvèdre, muscat white with small grains… an old carignan from 80 to 110 years occupies 5 ha of the area. Since 1996, father and son have been rewarded for their work by guides and specialized press. White, red and rosé, a range of 8 wines at affordable prices.
