The pressure is on at the Trencavel brewery! Nicolas Delous, a true beer enthusiast, is reviving the city's brewing tradition. He elaborates and brews, labels and markets three beers of his own that we can already find in some of the best restaurants and wine shops in the city. A light blonde without bitterness, a brown with sweet bitter accents and a taste of roasted coffee. Finally, an ale with a subtle taste of honey, and a successful packaging. The barrels where the elixirs are fermented take place in the back room, as does the bottling
