GUILLAUME FRANCE
A former companion of duty, Guillaume worked in the most famous French pastries, including the Maison in Lyon (the French reference in macaroons and artistic cakes). His Boutique shop opened in 2010, like that of Lunel, which was chained in 2014, is part of the same mindset: a fine, trendy and modern pastry, of those in Japan that inspire it, for example its cake called "Tokyo". Innovation, it places everywhere, in the alloys of colours, flavours and perfumes. It is found in the macaroons, through authentic proposals (cherry, apricot, caramel…) or downright crazy (roquefort, quenelle, piment pepper or foie-apple liver). It is found in desserts produced in cakes, whose names evoke as much the roots as the exploration (Antana, Madagascar, Amboise, Ardéchois, Désir…), as in the chocolates of Brazil, New Guinea, Venezuela, Cote d'Ivoire, Vietnam.
