The Fontès vineyards produce AOP Languedoc and Languedoc-Pézenas wines.
The territory of Fontès is marked by the presence of the sea, 20 million years ago. Much more recently, volcanism has structured the landscape. Through its burning wounds, it has poured billions ofm3 of material from the depths that have spread in the form of projections, flows and ashes. It is on these limestone soils and along these volcanic flows that we find the Fontès vineyards, on hillsides and terraces, drained by the Boyne river, where the AOP Languedoc and Languedoc Pézenas wines are produced. Following numerous awards, in particular for the Prieuré Saint-Hippolyte rosé, Fontès has been designated by journalists as the "Capital of Rosé".
From the Fontesol cellar in Fontès, walk towards the church, which is listed as a historical monument, passing under the village gates. By an old path, climb the Céressou volcano. This strombolian building dominates the surrounding plains. The lava lake of Péchet, which can be seen to the south from the summit of Céressou, is a particularly interesting structure. Currently, there are only five in the world! Then, after crossing the Boyne, you will head towards the Baumes volcano. Then, you will pass a few meters from the ruins of the castle of Mazers, before returning to the village by the hill of Clapisse.
