MOULIN MAS DE PALAT
The project took more than a year and a half to come to fruition, but the Mas Palat mill was born with an architecture as modern as it is original. Sébastien and Sandra Mora, the owners of the mill, have invested in a mill that can crush 1,500 kg per hour in two phases: the extraction is therefore done without any water input. A particularity that is both ecological and qualitative. This mill is entirely mechanized and equipped with high-performance tools, and crushes the olives of the area's suppliers as well as those of the couple's 20 hectares of olive trees. Planted in 2000, the trees allow the production of 5 organic single variety oils: olive, picholine, frantoio, arbequine, rougette, verdale as well as an oil of assembly. These oils can be found in their store next to the building and on their website, alongside Olivapero, these tasty olive purees, with figs, ceps or anchovies.
