The Union of Producers and Professionals of the Herault Olive Tree was created in 1999, when olive growing took up an important place in the department. Its tasks: promoting the origin and quality of products, defending the specificities of local varieties, and also promoting access to technical and economic assistance through the organization of the size, maintenance or registry of the olive tree and the organization of tasting courses… In addition, it, in collaboration with the Aude Union, is carrying out the project for the controlled designation of origin of the Languedoc oil (AOC Lucca olives in Languedoc having succeeded). Together in the Lucic Defense Union and Olive Oil of Languedoc, these two entities filed their first file in 2001. More than 15 years later, AOC is being recognized. It will involve 253 municipalities in Herault and 182 in the Aude.
