The Train is a Carnon institution. This reputation has been acquired over the past twenty years thanks to the passion conveyed within this address and thanks to the cuisine carried by the chef. Behind the stoves, he has managed to perfect the balance between tradition and modernity, between land and sea. Its dishes are presented in a colourful and spicy way, precision is given in each of its touches and on each of its plates. The house even has its own signature dish: the catigot with prawns. Only La Traine has this culinary invention because it was created here 20 years ago. This dish is made up of fish fillets, soups, mussels, potatoes and prawns cooked in white wine, all topped with a light garlic. A treasure for the taste buds.
