The originality of this pastry shop is that it offers pastries containing... 0% sugar (saccharose)! Sucrose is replaced by coconut sugar and/or birch bark sugar (Xylitol). Their cakes are 100% home-made and made on their premises. To lower the glycemic index and calories, they also reduce the wheat flour (white or wholemeal) by 50%, which is replaced by barley and lupin flour. The result: it's good, and it's healthy too!
