The region did not deserve less than these large vaults and this atmosphere to show what it has as best. It is in a former mansion of the 16th century renovated in the 19th century, enhanced by its slabs of Castries, its walls and ceilings with exposed stone that Jean-Marc, big expert of local delicacies, shares his passion with not less than 1,800 wines selected and some 400 local products (Cassoulet of Aude, Brandade from Nîmes, Olives and Olive Oil from the country, Tapenades, Fleur de Sel de Camargue, Terrines de Lozère...). On Saturdays, tastings are enlivened by the producers. A beautiful champagne shelf furnished with 80 references. The favourites: Château de Gaure, Mas de Chimère, a superb shelf of yellow wines of the Jura. Also, national references Gangloff (condrieux), Pierre Auvernoy (Jura) and Romanée Conti.
