Located in the heart of Côtes de Thongue, the vineyard stretches over an ancestral land: the vines were cultivated by the Romans already as two Roman marble heads were found there ploughing the land and a Romanesque tower watches over it. Jacques and Françoise Boyer, Heirs to a 70-hectare estate that has been transmitted from generation to generation, know its history (that of the Roman villa that excavations have revealed) and the potential for winemaking. Experience and tradition have combined with technology to honour a terroir which is made of clay and pebble, heated in the Languedoc sun and refreshed by a sea breeze or cevenol. Sustainable cultivation and reprocessing of used water by a bamboo planting system complete the ecological side of this area. Ten noble grape varieties have been carefully selected. The owners organise tasting to discover the nectars of this passionate couple: Les Folies (Cascaïllou, Red No.7 and White No.7) which are the best vintages on the estate. Then the vintages called Les Champs (Coq, Lys, Grillons, Calades) which is a selection of fruity and complex wines, Les Cépages or Les Folies Douces (with two nuggets, the Soulenque, a passerille wine, and Coup de Foudre which is a brandy of wine that bears its own name). The Boyer couple creates white wines with fine aromas, fruity rosé and full-bodied reds with a fleshy nose and a round and complex, evergreen mouth. The result of this quality work is superb...
