MAS DES VAUTES
The creation of the Mas des Vautes dates back to the 16th century. If the activity of this olive grove has ceased for several decades following the frost of 1956, it is finally the passion of the current owner of the place, Sophie Arnihac, which led to the resumption of the exploitation in 1998. She then manages 6,000 olive trees, an oil mill, installed since 2003 in the old stables, and a pasteurization workshop, under the historic vaults of the farmhouse. In 2017, the new owners, Sandrine and Sébastien Mora, took over the entire production. They ensure the quality of the entire production chain, besides the olives are harvested and pressed the same day or - at the latest - the next day. Five oils are available: two mono-varietal (picholine and picual) and three blends (picholine and picual, olive and blend, and lucques and olive). The lucques and picholines are also used for table olives: their fine and tasty flesh and their fruity herbaceous taste will seduce you. These varieties of olives are also used to make Olivautes, a delicious paste made from green olives and oil from the farmhouse, which is available in plain, anchovy, fig or cep versions. All the scents of the South are found in these delicate preparations, close to the tapenade, ideal in spreads for your aperitifs, and totally surprising in cooking sauces. The authenticity of the products magnify the land and the know-how of an ancestral tradition.
