CHRISTINE GOEMINNE - TRUFFES
In the propitious terroir of the Buèges valley, Christine, who used to work in the bank, cultivates vines all year round and truffle oaks - a very random crop, subject to the vagaries of the weather and therefore with very variable yields. For three months, from December 15th to March 15th approximately, she cellars the black Hérault truffle (Tuber melanosporum) in the company of her husband, Marc, treasurer of the Hérault truffle growers' union, and his bitch, Maya. Its brushed truffle allows to flavor with happiness omelettes, mashed potatoes, fresh pasta, foie gras and other festive dishes... Sale on the fairs in St-Jean-de-Buèges (Farmers' Day), Claret (Truffle and terroir day), St-Geniès-des-Mourgues, Uzès. The Hérault has a little more than 130 professional truffle growers.
