Nicolas Brahic is at the head of an exceptional breeding operation, which has earned him the medal of Chevalier de l'Ordre National du Mérite (Knight of the National Order of Merit). He raises his animals on the territory of southern Larzac, in these landscapes shaped by the shepherds of the Causses and Cévennes (agro-pastoralism), which have been recognized in 2011 as World Heritage of Humanity by UNESCO. 40 sows, 2 boars and all their piglets and 90 ewes, 2 rams and their lambs, all on 80 hectares where they are free to roam at leisure and feed on the natural food found along the way, to the rhythm of the seasons. That's not all: Nicolas Brahic has designed an innovative farm. He came up with the idea of creating an insect farm, the larvae of the Cétoine dorée, a beetle endemic to Larzac, thanks to the compost created from crushing the brushwood of the causses. And its pigs love it! This feed supplement also considerably reduces the quantity of cereals, which are very water-consuming, given to the pigs. The result is, unsurprisingly, a top-of-the-range, organic, low-fat, naturally salty meat, with an unequalled flavour that restores the aromas of this Mediterranean terroir. As for the charcuterie, it is dietetic: very little fat of which almost no saturated fat, with the minimum possible amount of added salt. The products are offered for direct sale, delivered to your home by refrigerated transporters.
