As we go to press, we learn of the departure of chef Julien Montassié from Riberach, but don't panic: his second-in-command, who knows the chef's recipes and secrets inside out, is taking over. It's now up to Dennys Teixeira, a young 26-year-old chef, to take charge of service, while maintaining the same guidelines set up by his mentor: seasonal dishes sublimated with brio through well-balanced menus ranging from 3 to 8 courses. We'll be keeping a close eye on this fair-trade, responsible gourmet restaurant.
