Managed by Martine Crespo, she invites you to discover the authenticity of this gourmet masterpiece from the Couserans region. Here, these light, mouth-watering pastries are prepared the same day, in the traditional way, with puff pastry, butter and fresh fruit. The store offers savory croustades with cheese, foie gras and scallops, as well as Lorraine-style variations with smoked bacon. For those with a sweet tooth, let yourself be tempted by traditional croustades with prunes, apples or pears. More refined creations with two different fruits are also available. To satisfy all tastes, Martine has concocted original croustades with pear and chocolate, or with crème fraîche, brandy and rum. Seasonal croustades, with fig in September and acacia honey between June and September, also feature on the menu.
