This nice little bistro opens its doors to the new bridge Neuf. The sober and careful decor invites you to slide your feet under the table for lunch or dinner in a "market return" spirit. The map celebrates the land through traditional French cuisine freely enriched with diverse cultural inputs: veloted peas with mint, Aubrac beef tataki to anchovies, roast shitakes with their algae salad Brittany, plays black pork of Bigorre confite, sashimi of thin line, Pyrenees sheep slice… Balthazar is a pleasant place, often animated by concerts or aperos vinyl, Tuesday from 8 p. m.

Juste très bruyant dans le resto, à peine on s'entendait parler, certainement dû à la taille du lieu et aux 2 tables de 8.
