The dishes are based on fresh products, seasoned with spices and herbs from the garden: duck foie gras with a citrus scent, sweetbreads braised in the old-fashioned way, sliced duck breast with ginger sauce... On Friday evening (on order), the garbure bigourdane is a must. This speciality of the region is composed of a soup and a dish based on pork and duck confit, stuffed duck neck, Tarbais beans, carrots, turnips, potatoes and cabbage.
