AUBERGE LE CABALIROS
This hostel is a real legend in the valley and take place in the tourist menu. Laurent Saint-Martin is one of those exceptional chefs who draw on the land for the réenchanter and it is in a magnificent establishment that its delights await you. In the summer, the terrace is assaut, as the view is magistrale, just think of reserving and specifying that you want to enjoy it too. The map is of the same size and know-how at the height, the specialties are developed with fresh products, selected among the best local producers: farm meat, black pork, Bigorre, fatty ducks and fario trout provide exceptional dishes. The garbure is eaten according to tradition, first in soup and then flat, it is anthology with its pig and duck conflict, stuffed necks, tarbais beans and ses vegetables. It is a real gastronomic table: to detail the vast proposals would be forgotten, but from risotto to gambas and ceps by the squab stuffed with cabbage and foie gras, the festival is an appointment. An indispensable address for its welcome, its map and its framework!
