The know-how can be found in the solid recipes that pay homage to the traditions of Bigorre and that follow the seasons. Chicken prepared the old fashioned way, roasted duckling, small vegetable garden, stews and soups, apple crumble, are the daily choices. Everything is obviously home-made and the varied cuisine is supported by a choice of rigorously selected products. A beautiful list of local wines accompanies the whole. Not to be missed!
