The chef's talent draws on these delicacies and invites you to the table of daring dishes such as the turbo fillet with olive oil or sole pan with a ceps fondue. We also advise you on the ris apples and their financial sauce, a subtle and delicate creation. Land is never far away and small fresh vegetables accompany each dish, to better glorify them. This traditional cuisine evolves over time and surprises follow the seasons. In a room with grey tones, desserts are in the same excellence and tatin or roasted pears in syrup compete with a choice of delicious pancakes, especially those of bilberries or Armagnac. The Chalet of Bizkaia provides an old farm kitchen that allows group meals from 30 people or those of the major life events.
