Since 1987, Ferme du Castérieu has been making its cheeses from pasteurized milk. The 100 cows and 300 Lacaune ewes are fed with feed grown on the farm, ensuring optimum milk quality. After 5 stages of production, the cheese is aged for 4 months at 12 degrees in the ripening cellar. Watch the animals in the meadows or in the barn, then head to the store, where Nicolas will welcome you. Taste cow's cheese, ewe's cheese or the tasty ewe-cow mix, and leave with a tomette or tome of each.
