The village of Sost was considered "The Village of Barousse Cheese", named after the eponymous valley, but today only four producers continue to make this cheese. The Ibos family - Yves and Cathy, and more recently their son Julien - are among them. They produce this typical cheese from the raw milk of their cows. Yves and Cathy have even founded an association for the recognition of Barousse cheese. You can buy their cheeses at the farm.

Excellent accueil que ce soit au domicile puisque la laiterie était fermée en ce debut d'après midi. Cathy extrêmement professionnelle fut efficace à tout point de vue. J'ai goûté son Barousse le soir un fois rentré sur Toulouse,un veritable delice..! Je reviendrai. .!
