His symphony has shaken up the purr of the Tarbes restaurant and it is with a brilliance worthy of the greatest that the Arpège has drawn lovers of gastronomy into its perfect harmony. Words are not usurped so much here you enter a world where the delicacy of flavours has taken place to lead the dance. The setting is beautiful, elegant, without forgetting a contemporary spirit, impeccable service without being borrowed... The establishment is one of the most beautiful in the area. Cooking here is an art, without borders, since the chefs work with several hands and mix their influences in a pretty concerto of know-how. The specialities of the Pyrenees are based on Japanese agreements, a daring marriage that is decidedly linked for the better. To detail the menu would be profane so much the omissions would become insulting, just know that, from sweet treats to desserts, the creation is total, flourished in plates so well drawn up that the first stroke of the fork seems murderous! Combining turbot, seaweed and doughnut flippers, foie gras escalope and turnip fondant, white chocolate mousse, lychee and raspberry shortbread, Arpège will rock you to the sound of perfection.
