Dominique Sousbielle, Aimé Cenac and Christian Etchebest have transformed the establishment into a modern brasserie. Wooden panels and tables of varying heights create a relaxed, friendly atmosphere. The view into the kitchen offers a glimpse of the quality of preparation. The chef has perfect control over cooking times: the food melts like a cloud and the flavor combinations are extraordinary. The desserts are just as excellent and meticulous as the rest of the menu. The hazelnut-chocolate cookie is particularly delicious.
