Frédéric Pommiers discovered his passion for pastry-making as a child, working alongside his grandmother. After taking a Bac and a CAP in pastry-making, he gained experience in Michelin-starred restaurants such as "Le Gavroche" in London, "Le Moulin de Mougins" in Cannes, and alongside renowned chefs such as MOF Daniel Giraud in Valence.
In 1992, he made his dream come true by opening his own boutique, Maison Pommiers. Frédéric distinguishes himself by innovating with pastry recipes that are less sweet and respect seasonal produce.
MAISON POMMIERS, THE STORY OF A BASQUE CAKE REVISITED IN ANGLET
It all started when Frédéric tasted a disappointing Basque cake in a restaurant. Determined to raise the profile of this emblematic pastry, in 2015 he set about creating a lighter, less fatty and less sweet version. With his team, he perfected the recipe, resulting in a Basque cake inimitable for its taste and shape, evoking an elegant Basque cross, in collaboration with Nadège Goyty. The secret of this success lies in a rethought manufacturing process, controlled temperatures and adapted baking.
Maison Pommiers offers limited-edition Basque cakes throughout the year, with flavors adapted to the seasons, such as chocolate for Easter or raspberry in June. Cream and cherry classics are always available.
