LA FERME DE LANSET
This little corner of paradise has a breathtaking view of the eponymous summit located at 2,100 meters above sea level and the village of Aydius. Facing the mountains, this farmhouse is a little marvel in terms of panorama. Here we make goat cheese! Some 300 damselflies make up the herd and if the kids arrive in February, they go up to pasture from April to December. You will be able to visit the goat farm and Thomas will explain his know-how, from breeding to packaging, as the cheeses are processed and matured on site. The goats are milked morning and evening, the milk is curdled, then cut into small cubes and finally stirred. The next day, the cheese is removed from the moulds and salted before maturing for up to twelve months. The explanations are always followed by a tasting. According to your favourites at La Bouc'tique, you can buy crabotins, a real goat's milk cheese, mountain cheese refined with jurançon, an unexpected raclette but above all the fabulous goat's cheese, a royal product if there is one and well named Henri IV!
