Ezope takes us into their world with their tasty focaccias and generous salads. In this corner, Antoine and Aude give pride of place to local producers: tome de Couëron, La Ferme à cueillir in Carquefou, Les volailles de l'Avenue in Teillé, Hélène Juvin's Guérande salt, Mr Minier's organic eggs... Among the seasonal recipes, you can choose the roast chicken and its onions confit with its tome de Couëron, its oak leaf and its home-made mayonnaise, or the Curé nantais and its braised mushrooms with its Jerusalem artichokes chips and its pepper sauce. Or the smoked haddock with Granny Smith, red radish and fresh cheese with dill. It's original and full of flavour. Once the recipe is chosen, it can be served as a salad or focaccia. Focaccia is the Italian speciality that is the cousin of our focaccia, here it is particularly soft, generous in olive oil and homemade with organic and local flour from the Giraudineau flour mill.
