After crossing the entire Butai industrial area, you will arrive at the Salons de la ferme aux oies, this establishment located at the very end of the road and which, surrounded by a garden and a pleasant terrace, is also surrounded by a small pond. The ideal setting for a lunch break or a country dinner. But Stéphane Meurisse's cuisine is far from being just a simple country cuisine. The terroir is certainly present, and the chef (Master restaurateur since 2015) has a predilection for regional products (black farm chicken, veal, cod fillet, Challans duck, salicorns, seaweed, vegetables...), but he doesn't just serve them like that. It sublimates and enhances them. You may be able to enjoy a drizzle of lean just roasted, virgin sauce with Guérande salicornia, a small pudding of pumpkin with seaweed, followed by a Tatin tart with caramelized apples, served warm and its scoop of vanilla ice cream for example. As for the name of the restaurant, it is a reference to the geese of the farm, which are not cooked but roam freely in the adjacent garden.
