The chef showcases his talent with a home-style cuisine based on fresh produce only. The deliberately short menu changes every 2 months. Research in the marriage of dishes and flavors, such as salmon confit with Timut pepper, celery and horseradish, followed by duck with polenta, red fruit-tomato vinegar condiment and carcass juice. Don't forget the desserts, again seasonal, like the one featuring clementines, soft honey-almond, Amaretto cream. One of the region's finest restaurants, well worth discovering.
