A key figure in La Baule, Christophe Roussel was elected among the 20 indispensable French chocolate in 2014. This globe-trotter has a very varied career path. After traditional learning, he settled in Uruguay in a Relais & Château, then in Switzerland at the Casino de Berne, and in Saint-Barthélémy at Jean-Marie Rivière (Alcazar, Paradis Latin) where there remained several years alongside Laurent Couegnas (Ducasse, Pré Catelan). Then comes the time to create his own company in 2008: He opens his first shop in Guérande. It now has six shops, one in Paris! In storefront, his pastries are so beautiful that one would almost hesitate to cross them like the individual Elixir cake, a sparkling, creamy, creamy, pear, almond and lemon. And what about the macarons in some fifteen flavors, sometimes original flavors such as cheesecake, lavender apricot or caramel wrapped with black chocolate? The chocolate palette is also very attractive: tabs to the flower of salt, hazelnuts/almonds/peanuts coated, beggars… Allergies are not forgotten with a gluten-free cake.
