This beautiful early 20th-century building in the Nantes vineyards is home to an exceptional place where gastronomy and inventiveness go hand in hand. Chef Lionel Houssay likes to marry fish with local produce. Excellent dishes. Signature starter: crab financier with wasabi, fine scallops and shiso with puffed quinoa, followed by Icelandic cod in olive oil vegetal, Petalo Nero risotto with Parmesan, sorrel emulsion and to finish: chocolate marquise, red fruit heart and candied pomegranates.
