SALT MARSHES
A salt marsh in Les Moutiers-en-Retz, producing top-quality salts that are widely used by Michelin-starred chefs.
From the Middle Ages until the 16th century, the "Baye de Bretagne" (now the Bay of Bourgneuf) was the largest salt production area in Europe, ensuring its prosperity and international renown. From the 15th to the 18th century, up to 30,000 tons of salt were produced per year. The salt marshes were gradually abandoned as the bay silted up. The salt industry was revived in the Marais Breton thanks to enthusiasts. The salt of the Breton marsh is recognized for its quality of production, and is used by great starred chefs.
