Japanese cuisine, concocted by a willing and curious chef in a restaurant-bar in Nantes.
Many fans of Japanese cuisine in Nantes are familiar with Izakaya Joyi, Anthony Nguyen's restaurant featuring sushi, sashimi, teriyaki and tempura (as well as a Japanese grocery store...). In 2017, this willing and curious chef opened a second Nantes address: Ramen Ya. Located on rue de la Fosse, this bar specializes in ramen. For the uninitiated, ramen is THE Japanese national dish. Served in a bowl, it features broth, noodles, pork and a variety of side dishes. At Ramen Ya, as soon as you walk through the door, you feel like you're in a Japanese town: light wood, a long bar with the kitchen on one side and the customers on the other. Barely prepared, already served, all before the customer's very eyes. A true sign of transparency! As for the plate (or rather bowl!), you'll need a little time to grasp the subtleties of the menu. But rest assured that everything is homemade, from the noodles (made from organic flours) to the tonkotsu (pork or free-range chicken broth simmered for 8 hours). Spinach in the Shoyu, yuzu zest in the Shio, hot sauce in the Jigoku, black garlic oil in the Chuka or shoyu sauce in the Tsukeme, each dish offers a singularity that's worth stopping for.
