Restaurant preparing simple but good, fresh, organic and vegetarian dishes on the slate menu
The restaurant La Cachette can be found on rue du Refuge, a small alleyway just a stone's throw from Saint-Pierre Cathedral. It's well worth taking out your compass for a healthy, gourmet stopover. For 36 years, it was called Resto-Revues. Valérie and Joël took over in mid-2016, following the retirement of their predecessors. The menu and decor have changed, but the style of organic, vegetarian and market cuisine has been retained. The place is cosy, with three small rooms with white walls and exposed beams spread over three levels. Valérie's welcome is warm and friendly, and she's quick to put her guests at ease. Menu à l'ardoise: a starter, main course and dessert to choose from 6 suggestions, including 3 vegan options. On the plate, it's simple but good, fresh and tasty, thanks to Joël in the kitchen. That day, a vegetable terrine with curry sauce and gourmet salad, a vegetable pâté or a duck liver parfait as a starter; to follow, a veggie steak or a fennel quenelle with star anise sauce, grilled tuna with garlic butter sauce, grilled spider pork with Espelette pepper sauce or royal sea bream with red butter. And for a sweet touch, a duo of white and dark chocolate mousse, nougat glacé with red fruit coulis or rhubarb crumble tart. Note that most of the vegetables come from an organic market gardener, the herbs and spices from the owners' own garden, and the fish from the Sables-d'Olonne fish market.
