A green truck and an original concept are the main features of L 'Equilibré, a fast-paced catering service on the nina. Jocelyn's ambition? Demonstrate that it is possible to eat simply, healthily and quickly at noon. This offers balanced meals, but a sophisticated minimum, with 3 choices of identical dishes all week, namely quiches, lasagna or mike. In this way, he himself made the meals (even more heated dishes) in his laboratory, and then heated them on the spot in his truck. Like a benevolent mother, Jocelyn insists that people eat an entry and dessert. Let them eat balanced! The dishes are family dishes, from those he ate at his grandparents, including velouted Dubarry with leeks and cabbage, quiche to leeks and smoked salmon, chicken hunter (cognac-fed, deglaciated at muscadet and accompanied by potatoes), but also roughness sausage or quiche to the nantes mushrooms. Side dessert: compote, apple crumble, milk rice… Nothing but safe values and better than butter! To prepare his dishes, he uses forgotten vegetables such as butternut, turnip, leeks, cabbage… Thanks to its balanced dishes, Jocelyn wishes to convey important values to its eyes, such as local buying (it supplies short circuits), affordable prices, rapid service, customer welfare and healthy eating.
