LÀ CANTİNE FERMİÈRE
High-end sandwich shop offering passionate cooking based on good products.
Pierre Michel opened his sandwich shop in early 2020. But not just any sandwich shop! You've got "LÀ", a top-of-the-range sandwich shop. And to make it happen, this committed chef with a passion for good produce spent over six months scouring farms and markets for the best local producers involved in an environmentally-friendly approach. The list is transparently displayed on the meadow-green front doors of this restaurant in the Cité des Congrès district. To underline this authentic, convivial feel, the decor, inspired by her grandmother Joséphine, has been sourced from all over the place. Customers flock here for hot and cold sandwiches, daily specials and soups, not forgetting desserts and homemade fruit juices. You won't be able to resist the star dish: the grilled sausage sandwich with muscadet and onion confit (from Ferme des cochons d'antan in Legé) and tomme from Saint-Père (Sainte-Pazanne). Unless you prefer the vegetarian dish named Yvonne, a nod to her grandmother, with roasted squash, leek fondue, beet hummus, fresh herb cheese (Ferme des Roches, Couëron), pickles and batavia in a double baguette from Maison Arlot Cheng. In December 2020, you may have tasted the Suspendu sandwich, the result of a joint venture with Michelin-starred chef Éric Guérin, where, in buckwheat bread from La Petite Boulangerie, Saint-Joachim langoustine was paired with farm-fresh chicken roasted on site, topped with buckwheat butter, onion confit, mustard seeds and Nantes lamb's lettuce. On the sweet side, you'll love the Flofi apple/caramel/chantilly or Mamie Joséphine's apple cake. As you'll have gathered, everything here is fresh, homemade and prepared before your astonished eyes by Pierre and Maxime, his sidekick! We're "THERE"!
