Don't search. Freia is not available by phone. To reserve a place in this Scandinavian-style gourmet restaurant, you have to go through the establishment's website. Then, surprise. The address leads to a parking lot. Take the elevator up to the 6th floor to reach the restaurant, set like a greenhouse in the middle of a terrace-garden teeming with herbs, with a bird's-eye view over Nantes. The concrete fades away. This is Freia, named after the Nordic goddess of the earth and fertility. Freia is an invitation to travel to the heart of an inventive, plant-based cuisine. Here, the menu changes according to the seasons and the inspiration of Sarah Mainguy, whose second establishment in Nantes is Freia. In the evening, the chef offers a unique eight-course menu inspired by nature and the local producers from whom the gifted young chef sources her ingredients. The plate is beautiful and delivers on its promises. Mise en bouche with gwell snow, vol-au-vent of peas with sunflower juice and aromatics, zucchini and divine shellfish emulsion, mystery ice cream reenchanted with marjoram oil... Herbs and flowers gently give rhythm to each dish. Sarah Mainguy's poetic approach is evident in these sensitive proposals.
