LE POULAİLLER D'YVETTE
In a nod to his mother Yvette's Breton farm, Gilles Renault opened an old-fashioned rotisserie in the heart of Chantenay at the end of August 2020. After 40 years in the business, including 15 years at La Cigale after a gastronomic career in Paris alongside starred chefs (from Paul Bocuse to Joël Robuchon), this chef has left his "Bistrot" on rue de la Bastille to devote himself to his "Poulailler". Obviously the emphasis is on quality with organic and local products as he works with the poultry of Challans. The chickens are either black or yellow, but always with a red Label, and are of a nice size (about 1.5 kg). And on order you can get guinea fowl and cans of Challans also in Label Rouge. In his little shop with its chick yellow walls, , he only offers take-away products: roast chicken of course, soft and golden brown as you like, accompanied by excellent vegetables preserved in chicken juice, but also a lunch formula with salad or dish of the day, dessert and drink. You can enjoy for example a Carnaroli risotto with coconut curry shrimps or a pallet of semi-salted pork, green Berry lentils and fried onions or a tagine with dates and almonds, grape semolina. And for the sweet note, savour a homemade dessert such as rice pudding, chocolate mousse with praline chips or the famous Nantes cake. The Chef also offers chicken-based products such as these delicious roast chicken rillettes with sweet chorizo. A delicious idea for the aperitif!
