Ivan Garber is one of the emblematic fishmongers of the Talensac market, with a serious desire to delight fish lovers. His speciality is "ikejime" fish (sea bass, pollack). This is a Japanese method of slaughtering, in which the fish is quickly "put to sleep" before being worked on. Taste, quality and preservation are enhanced. Ivan obtains his supplies from various fish auctions: Saint-Gilles-Croix-de-Vie, Les Sables, Royan. His idea? To help people rediscover the thousand and one pleasures of eating fish, mainly local fish.
