After meat, the strength of this restaurant is family cohesion! This is the home of Patrick Guérin (the father), who greets you as soon as you cross the threshold behind his stall. This former butcher selects the half-carcasses himself at the slaughterhouse in La Roche-sur-Yon, details them, then takes pleasure in grilling the pieces of your choice in the fireplace over a wood fire, backed up by a professional team. Le Butcher is also run by sons Kévin and Romain, who opened a2nd establishment in Saint-Herblain in 2022. These two addresses, "Sud Loire" and now "Nord Loire", are a veritable feast for the palate. You choose the butcher's cuts of your choice, then let them crackle on the wood-fired grill. Here, the meats are guaranteed Parthenaise, tender and melt-in-the-mouth. Here we have rib-eye steak, entrecôte, rib of beef, baron of lamb, sausage, rump steak, andouillettes, kidneys and sweetbreads... Served with homemade side dishes and sauces. Our signature dishes include navarin lamb and pork pluma. And what about the grandmother? She puts her own spin on the tasty recipes for sausages, boudins and terrines that the family is keen to perpetuate. Affordable lunchtime formulas are available alongside the gourmet menu. For those who prefer, there are alternatives with fish (octopus and sea bream), fine salads and other recipes to share. Service is impeccable.
